  5. 5. Sear the fillet on each side over high heat until it forms a brown crust.
  6. 6. Reduce the heat of the pan.
  7. 7. Continue cooking the meat until the inside is still pink.
  8. 8. Peel the onions.
  9. 9. Slice the onions into thin strips.
  10. 10. Wash the peppers.
  11. 11. Halve the peppers.
  12. 12. Remove the seeds from the peppers.
  13. 13. Cut the flesh of the peppers into bite-sized pieces.
  14. 14. Heat some oil in a second grill pan.
  15. 15. Place the baguette halves cut-side down in the pan.
  16. 16. Toast the buns until golden brown.
  17. 17. Remove the baguette halves from the pan.
  18. 18. Set the toasted buns aside.
  19. 19. Add the onion strips to the pan.
  20. 20. Add the pepper pieces to the pan.
  21. 21. Sweat the vegetables over medium heat, turning occasionally, until they are golden yellow.
