🍽️ Baguette Sandwich with Egg Salad

Ingredients
- 5 hard-boiled eggs
- 4 lettuce leaves
- salt
- pepper (from the mill)
- 2 tsp lemon juice
- 5 tbsp mayonnaise
- 1 shallot
- 1 tbsp chopped parsley
- 200 g wax beans
- 1 larger tomato
- 8 cocktail tomatoes
- 4 pieces baguette (with sesame and poppy seeds)
Instructions
- 1. Peel the eggs and chop them finely. Peel the shallot and mince it finely. Mix the egg with the shallot and mayonnaise. Season to taste with salt and pepper. Add the lemon juice and parsley and mix everything well.
- 2. Wash the lettuce leaves and shake them dry.
- 3. Cook the wax beans in salted water for 10 minutes. Drain them, shock them immediately in ice water (to stop cooking) and let them drain well.
- 4. Slice the tomato and halve the cherry tomatoes. Slice the baguette open.
- 5. Place the lettuce leaves on the bottom baguette halves. Spread the egg salad on top and place the tomato slices over it. Put the sandwich on a plate and cover with the top baguette half. Serve with the wax beans and cherry tomatoes.
