🍽️ Bagels with Paprika and Cream Cheese Spread

Ingredients
- 150 ml Buttermilk
- 1 packet Dry yeast
- 1 tsp Honey
- 280 g Flour (Type 1050)
- Salt
- Pepper
- 1 tsp Paprika powder (sweet)
- 10 g black sesame seeds (1 tbsp)
- 1 tsp Baking soda
- 200 g Cream cheese (13% fat)
- 1 tbsp Yogurt (1.5% fat)
- 1 tsp Tomato paste
- 1 Clove garlic
- 200 g red bell peppers (1 red bell pepper)
- 400 g yellow bell peppers (2 yellow bell peppers)
- Soy sauce (to taste)
- 500 g Salad cucumber (1 Salad cucumber)
Instructions
- 1. Slightly warm the buttermilk in a small saucepan.
- 2. Stir the dry yeast and honey into the lukewarm buttermilk.
- 3. Put flour, 1 teaspoon of salt, some pepper, and the paprika powder into a mixing bowl.
- 4. Pour the yeast-buttermilk mixture in.
- 5. Knead the dough until smooth using the dough hooks of a hand mixer.
- 6. If the dough is too firm, add a little more water.
- 7. Cover the dough with a kitchen towel.
- 8. Let it rise in a warm place for about 1 hour.
- 9. Wait until the volume has roughly doubled.
- 10. Divide the risen yeast dough into 10 equal pieces.
- 11. Form the pieces into balls.
- 12. Press a hole into the center of each with your finger.
- 13. Enlarge the hole by circling with your finger.
- 14. Boil 1 liter of water in a large pot.
- 15. Dissolve the baking soda in the boiling water.
- 16. Line a baking sheet with baking paper.
- 17. Sprinkle the baking sheet with sesame seeds.
- 18. Dip the bagels in batches with a slotted spoon for 1 minute into the boiling baking soda water.
- 19. Remove the bagels from the water.
- 20. Let them drip slightly.
- 21. Place them on the prepared baking sheet.
- 22. Bake the bagels in the preheated oven at 200 °C (convection: 180 °C, gas: setting 3) on the middle rack for 10-15 minutes.
- 23. Mix the cream cheese with the yogurt and tomato paste.
- 24. Peel the garlic.
- 25. Chop the garlic very finely.
- 26. Stir the garlic into the cream cheese mixture.
- 27. Halve the bell peppers.
- 28. Remove the seeds from the bell peppers.
- 29. Wash the bell peppers.
- 30. Finely dice 1/2 red and 1/2 yellow bell pepper half.
- 31. Fold the diced peppers into the cream cheese mixture.
- 32. Season the cream with salt, pepper, and soy sauce.
- 33. Wash the cucumber under hot water.
- 34. Dry the cucumber.
- 35. Trim the cucumber.
- 36. Slice the cucumber into 1 cm thick slices.
- 37. Take the bagels out of the oven.
- 38. Let them cool slightly on a cake rack.
- 39. Cut the remaining bell peppers into wide strips.
- 40. Serve the pepper strips with the cucumber slices and cream cheese spread alongside the bagels.
