  1. 1. Slightly warm the buttermilk in a small saucepan.
  2. 2. Stir the dry yeast and honey into the lukewarm buttermilk.
  3. 3. Put flour, 1 teaspoon of salt, some pepper, and the paprika powder into a mixing bowl.
  4. 4. Pour the yeast-buttermilk mixture in.
  5. 5. Knead the dough until smooth using the dough hooks of a hand mixer.
  6. 6. If the dough is too firm, add a little more water.
  7. 7. Cover the dough with a kitchen towel.
  8. 8. Let it rise in a warm place for about 1 hour.
  9. 9. Wait until the volume has roughly doubled.
  10. 10. Divide the risen yeast dough into 10 equal pieces.
  11. 11. Form the pieces into balls.
  12. 12. Press a hole into the center of each with your finger.
  13. 13. Enlarge the hole by circling with your finger.
  14. 14. Boil 1 liter of water in a large pot.
  15. 15. Dissolve the baking soda in the boiling water.
  16. 16. Line a baking sheet with baking paper.
  17. 17. Sprinkle the baking sheet with sesame seeds.
  18. 18. Dip the bagels in batches with a slotted spoon for 1 minute into the boiling baking soda water.
  19. 19. Remove the bagels from the water.

  22. 22. Bake the bagels in the preheated oven at 200 °C (convection: 180 °C, gas: setting 3) on the middle rack for 10-15 minutes.

  30. 30. Finely dice 1/2 red and 1/2 yellow bell pepper half.

  35. 35. Trim the cucumber.
  36. 36. Slice the cucumber into 1 cm thick slices.
  37. 37. Take the bagels out of the oven.
  38. 38. Let them cool slightly on a cake rack.
  39. 39. Cut the remaining bell peppers into wide strips.
  40. 40. Serve the pepper strips with the cucumber slices and cream cheese spread alongside the bagels.
