  4. 4. Heat a non-stick pan without oil.
  5. 5. Toast the sesame seeds in the pan until fragrant.
  6. 6. Place the sesame seeds in a mortar.
  7. 7. Crush the sesame seeds coarsely.
  8. 8. Transfer the sesame seeds to a bowl.
  9. 9. Add salt and olive oil.
  10. 10. Fold in the finely chopped wild garlic.
  11. 11. Add the grated Pecorino cheese.
  12. 12. Blend the mixture briefly with a hand blender for a smoother texture.
  13. 13. Season the paste with salt and pepper to taste.
  14. 14. Fill the paste into clean jars.
  15. 15. Pour a thin layer of oil over the paste.
  16. 16. Store the paste in the refrigerator.
  17. 17. Consume the paste within two months.
