🍽️ Homemade Wild Garlic and Sesame Paste

Ingredients
- 200 g wild garlic
- 50 g sesame seeds
- salt
- pepper
- 100 ml olive oil
- 2 tbsp Pecorino (finely grated)
Instructions
- 1. Rinse the wild garlic under running water.
- 2. Dry the leaves thoroughly.
- 3. Chop the wild garlic leaves very finely.
- 4. Heat a non-stick pan without oil.
- 5. Toast the sesame seeds in the pan until fragrant.
- 6. Place the sesame seeds in a mortar.
- 7. Crush the sesame seeds coarsely.
- 8. Transfer the sesame seeds to a bowl.
- 9. Add salt and olive oil.
- 10. Fold in the finely chopped wild garlic.
- 11. Add the grated Pecorino cheese.
- 12. Blend the mixture briefly with a hand blender for a smoother texture.
- 13. Season the paste with salt and pepper to taste.
- 14. Fill the paste into clean jars.
- 15. Pour a thin layer of oil over the paste.
- 16. Store the paste in the refrigerator.
- 17. Consume the paste within two months.
