Ingredients
- 40 g pine nuts
- 40 g wild garlic (2 bunches)
- 40 g Pecorino (1 piece; hard cheese made from sheep's milk)
- 120 ml olive oil
- salt
- pepper
Instructions
- 1. Toast the pine nuts in a pan without added fat until they are golden brown. Wash the wild garlic, dry it in a salad spinner, and chop it roughly. Grate the Pecorino cheese.
- 2. Puree the wild garlic together with the pine nuts until smooth using a hand blender or a stand blender. Add the olive oil gradually until the pesto has a creamy texture.
- 3. Stir in the grated Pecorino. Finally, season the wild garlic pesto to taste with salt and pepper.
