🍽️ Oven-baked Trout with Fresh Herb Pesto

Ingredients
- 4 kitchen-ready trout
- 1 bunch parsley
- 1 bunch dill
- 1 onion
- 2 garlic cloves
- 40 g pine nuts
- 6 tbsp olive oil
- some lemon juice
- salt
- pepper from the mill
- 2 tbsp butter
- lemons (for garnish)
Instructions
- 1. Rinse the trout under running water and pat them thoroughly dry with a kitchen towel.
- 2. Rinse the fresh herbs briefly under water (set aside some parsley for garnish), shake off excess water and chop them finely.
- 3. Peel the onion and the garlic clove and cut them into small cubes.
- 4. Roughly chop the pine nuts.
- 5. Place all ingredients in a blender and puree with the olive oil until smooth. Finally, season the pesto to taste with lemon juice, salt, and pepper.
- 6. Spread some of the pesto on the inside of the trout. Melt the butter in a small saucepan.
- 7. Place the trout on a baking sheet lined with baking paper. Brush them with the melted butter and bake in the preheated oven at 180 degrees Celsius conventional heat (Gas level 2-3 or fan 160 degrees) for about 20 minutes.
- 8. Spread the remaining pesto on the plates, place the cooked trout on top, and serve garnished with lemon wedges and the reserved parsley.
