  1. 1. Rinse the trout under running water and pat them thoroughly dry with a kitchen towel.
  2. 2. Rinse the fresh herbs briefly under water (set aside some parsley for garnish), shake off excess water and chop them finely.
  3. 3. Peel the onion and the garlic clove and cut them into small cubes.
  4. 4. Roughly chop the pine nuts.
  5. 5. Place all ingredients in a blender and puree with the olive oil until smooth. Finally, season the pesto to taste with lemon juice, salt, and pepper.
  6. 6. Spread some of the pesto on the inside of the trout. Melt the butter in a small saucepan.
  7. 7. Place the trout on a baking sheet lined with baking paper. Brush them with the melted butter and bake in the preheated oven at 180 degrees Celsius conventional heat (Gas level 2-3 or fan 160 degrees) for about 20 minutes.
  8. 8. Spread the remaining pesto on the plates, place the cooked trout on top, and serve garnished with lemon wedges and the reserved parsley.
