🍰 Creamy Avocado Oat Walnut Pudding

Ingredients
- 2 organic limes
- 2 ripe avocados
- 2 bananas
- 100 ml coconut milk
- 100 g cream cheese (45 % fat in dry matter)
- 2 tbsp honey
- 1 pinch vanilla powder
- 100 g walnut kernels
- 20 g fine oat flakes (4 tsp)
Instructions
- 1. Rinse the lime under hot water and dry it.
- 2. Finely grate the lime zest.
- 3. Cut both limes in half.
- 4. Squeeze the juice from the lime halves.
- 5. Cut the avocados in half.
- 6. Remove the pit from the avocados.
- 7. Scoop the flesh out of the skin.
- 8. Cut the flesh into coarse cubes.
- 9. Drizzle the avocado cubes with half of the lime juice.
- 10. Peel the bananas.
- 11. Cut the bananas into pieces.
- 12. Blend the banana pieces finely together with the avocado cubes.
- 13. Add the lime zest to the mixture.
- 14. Add the coconut milk to the mixture.
- 15. Add the cream cheese to the mixture.
- 16. Add the honey to the mixture.
- 17. Add the vanilla powder to the mixture.
- 18. Blend the entire mixture until it is creamy.
- 19. Season the mixture with the remaining lime juice.
- 20. Fill the pudding mixture into small bowls.
- 21. Sprinkle the avocado pudding with walnuts.
- 22. Sprinkle the avocado pudding with oat flakes.
