  1. 1. Peel the shallot and chop it into very small cubes.
  2. 2. Cut the avocados in half lengthwise.
  3. 3. Remove the pits and scoop the flesh out of the skins.
  4. 4. Cut the lime in half and squeeze out the juice.
  5. 5. Wash the cilantro and shake it dry thoroughly.
  6. 6. Chop the cilantro finely.
  7. 7. Puree the avocado flesh together with the lime juice and cilantro until smooth.
  8. 8. Stir the chopped shallot into the avocado mixture.
  9. 9. Season the dip to taste with salt, pepper, and cayenne pepper.
  10. 10. Wash the chives and shake them dry.
  11. 11. Cut the chives into fine rings.
  12. 12. Serve the dip sprinkled with a little cayenne pepper and the chive rings.
