🍳 Avocado Toast with Egg

Ingredients
- 1 Sweet potato
- 2 tbsp Olive oil
- Salt
- Pepper
- 4 Eggs
- 2 Avocados
- 50 g Cream cheese
Instructions
- 1. Peel the sweet potatoes and slice them lengthwise into rounds about 1 centimeter thick. Drizzle with olive oil, season with salt and pepper, and bake in the preheated oven at 180 degrees Celsius (160 degrees Celsius for fan-assisted or gas mark 2-3) for 10 to 15 minutes.
- 2. Meanwhile, bring a pot of water to a boil and cook the eggs in it for 10 minutes. Cut the avocado in half, remove the pit, scoop out the flesh, and slice it thinly.
- 3. Remove the sweet potatoes from the oven and let them cool down slightly. Then spread cream cheese over them.
- 4. Arrange the avocado slices on top and grate the boiled egg over them. Season the toasts with salt and pepper and serve.
