🍳 Avocado Toast with Fresh Coriander

Ingredients
- 4 limes
- 300 ml tomato juice
- a little Worcestershire sauce
- a little Tabasco
- salt
- black pepper
- 1 small red onion
- 0.5 lemon
- 2 tbsp olive oil
- 1 avocado
- 2 slices sourdough crust bread
- a little coriander
Instructions
- 1. Squeeze the limes the day before. Mix 8 tablespoons of lime juice with 4 tablespoons of water and freeze the mixture in an ice cube tray.
- 2. Stir the tomato juice with Worcestershire sauce, Tabasco, a pinch of salt, and pepper. Place the mixture in the refrigerator covered.
- 3. Peel the onion and dice it finely. Squeeze the lemon. Mix 1 tablespoon of lemon juice with salt, pepper, and the onion cubes. Stir in the olive oil.
- 4. Halve the avocado and remove the pit. Scoop out the flesh with a spoon and cut it into slices.
- 5. Add the avocado to the onions, mix everything gently, and let the mixture sit for 15 minutes.
- 6. Toast the bread in a toaster or under the hot grill until golden brown on both sides. Wash the coriander, shake it dry, and pick off the leaves.
- 7. Place the avocado on the bread slices and sprinkle with the coriander leaves.
- 8. Place 2 lime ice cubes in each of two small glasses and pour the tomato juice over them. Lightly moisten the rims of the glasses and dip them in salt for decoration.
