🥗 Asparagus Avocado Salad

Ingredients
- 200 g green asparagus
- 4 tbsp olive oil (60 ml)
- 4 tbsp vegetable broth (60 ml)
- 2 garlic cloves
- 2 avocados
- 2 tbsp white wine vinegar (30 ml)
- salt
- pepper
- 1 bunch basil (10 g)
- 200 g feta cheese (9 % fat absolute)
Instructions
- 1. Clean the asparagus spears, pat them dry, and trim off the woody bottom ends. Fry the asparagus with a little oil in a pan over medium heat for about 3 minutes. Deglaze with vegetable broth, cover the pan, and simmer for approx. 5 minutes until tender-crisp.
- 2. Peel the garlic clove and chop it finely. Add the garlic to the asparagus and fry everything for 1 minute over medium heat. Remove the pan from the heat, stir in vinegar, salt, pepper, and the remaining olive oil, and let the mixture marinate for 25 minutes.
- 3. Peel the avocados, remove the pits, and slice them thinly. Arrange the slices in a fan shape on the plates and add the asparagus. Sprinkle crumbled feta cheese over them and drizzle the seasoned sauce on top. Garnish the salad with basil leaves and serve.
