🍽️ Avocado Sandwich

Ingredients
- 4 slices whole wheat toast
- 1 tsp tomato paste
- some leaves endive
- chives
- 2 tomatoes
- 1 avocado
- some lemon juice
- salt
- pepper from the mill
Instructions
- 1. Toast the bread and let it cool down completely. Spread the slices thinly with tomato paste.
- 2. Wash the lettuce, remove the tough stems, and spin it dry. Rinse the chives, shake them dry, and cut them into fine rings. Wash the tomatoes, rub them dry, remove the hard stem area, and slice them.
- 3. Halve the avocado, remove the pit, and peel it. Cut the flesh into wedges and drizzle with lemon juice.
- 4. Layer the toast slices alternately with lettuce, tomato, and avocado pieces. Season with salt and pepper and sprinkle with chives. Top the sandwich with another toast slice. Cut it diagonally in half and serve.
