  1. 1. Grate the Parmesan very finely.
  2. 2. Mix the grated Parmesan with the breadcrumbs and sesame seeds in a bowl.
  3. 3. Season the dry mixture with a pinch of salt and some pepper.
  4. 4. Whisk the egg in a separate bowl until it is airy.
  5. 5. Cut the avocados in half.
  6. 6. Remove the pit from the avocado halves.
  7. 7. Carefully take the flesh out of the skin.
  8. 8. Cut the flesh into wedges.
  9. 9. Coat the avocado pieces first in the egg mixture.
  10. 10. Then roll the avocado pieces in the Parmesan-sesame mixture.
  11. 11. Place the breaded avocado wedges on a baking sheet.
  12. 12. Preheat the oven to 180 degrees Celsius conventional heat (convection 160 degrees or gas mark 2-3).
  13. 13. Bake the avocado sticks for about 20 minutes in the preheated oven.
