🍽️ Avocado halves stuffed with marinated shrimp

Ingredients
- 200 g Shrimp
- 1 Shallot
- 2 Spring onions
- 1 Stalk Celery
- 1 fresh Bay leaf
- 2 tbsp Olive oil
- 100 ml White wine
- 1 tbsp White balsamic vinegar
- Salt
- Pepper
- 1 avocado
- 2 tbsp Red bell pepper cubes
- 4 Cocktail tomatoes
- 1 Pinch chopped red chili peppers
- Lemon juice (for drizzling)
Instructions
- 1. Place the shrimp, the diced onion, and the celery stalk cut into thin strips in a bowl.
- 2. Add the bay leaf.
- 3. Whisk together the oil, vinegar, white wine, capers, salt, and pepper to make a marinade.
- 4. Pour the marinade over the shrimp.
- 5. Make sure everything is covered with liquid.
- 6. Cover the bowl.
- 7. Leave it in the refrigerator overnight.
- 8. Turn the shrimp occasionally.
- 9. Baste them with the marinade.
- 10. Wash the cherry tomatoes.
- 11. Drain them.
- 12. Slice them.
- 13. Mix them with the diced peppers and chili pieces.
- 14. Cut the avocado in half.
- 15. Remove the pit.
- 16. Drizzle the flesh with lemon juice.
- 17. Fill some of the pepper-tomato-chili mixture into the avocado halves.
- 18. Take the marinated shrimp out of the marinade.
- 19. Arrange them on top of the avocados.
