🍽️ Avocado Stuffed with Cod Paste

Ingredients
- 300 g cod fillet
- 100 g cassava flour
- 2 avocados
- salt
- pepper (from the mill)
- 3 tbsp lemon juice
- head lettuce
- pepper cubes (2 tbsp each red and yellow)
- black olives (pitted)
Instructions
- 1. Cut the cod fillet into small cubes.
- 2. Process the fish cubes in the food processor until finely minced.
- 3. Cut the avocados in half lengthwise.
- 4. Remove the pits from the avocado halves.
- 5. Carefully scoop out the flesh from the shells.
- 6. Mash the removed flesh with a fork.
- 7. Mix the cod paste and the mashed avocado flesh in a bowl.
- 8. Stir the cassava flour into the fish-avocado mixture.
- 9. Season the mixture with salt, pepper, and a splash of lemon juice.
- 10. Fill the empty avocado halves with the prepared mixture.
- 11. Cut the leaf salad into thin strips.
- 12. Arrange the salad strips on the plates.
- 13. Place the stuffed avocado halves on top of the salad.
- 14. Sprinkle the avocados with diced bell peppers.
- 15. Garnish the dish to taste with additional bell pepper cubes and thin olive slices.
