  1. 1. Squeeze the lime and collect the juice. Also squeeze the half orange and set the liquid aside separately.
  2. 2. Cut the avocado in half and carefully remove the pit with a knife. Separate the flesh from the skin and cut it into small cubes. Place the pieces in a tall container and stir in one tablespoon of lime juice.
  3. 3. Wash the spring onions thoroughly and slice them into thin rings.
  4. 4. Wash the coriander and shake it dry. Pluck the leaves from the stems. Set aside two tablespoons of spring onion rings and one tablespoon of coriander leaves for garnishing.
  5. 5. Puree the avocado, spring onions, and coriander very finely using a hand blender. Stir in one tablespoon of lime juice and enough orange juice until the sauce becomes creamy. Finally, season with salt, pepper, and a pinch of cayenne pepper.
  6. 6. Make a shallow cut along the back of the shrimp and remove the dark vein. Rinse the shrimp and pat them completely dry with kitchen paper.
  7. 7. Heat the oil in a large pan. Fry the shrimp over medium heat, turning frequently, for about two minutes until cooked all around. Pour in the remaining lime and orange juice and let the mixture come to a brief boil.
  8. 8. Season the shrimp with salt and pepper. Sprinkle the avocado sauce with the remaining spring onions and coriander leaves. Place the shrimp on top and serve the dish immediately.
