🍲 Creamy Avocado Shrimp Soup with Physalis

Ingredients
- 100 g Physalis
- 200 g cooked, peeled large shrimp (with tail fin)
- 2 limes
- pepper (from the mill)
- 1 shallot
- 600 ml chicken broth
- 100 ml whipping cream
- 2 ripe avocados
- salt
- 1 pinch cayenne pepper
- 4 sprigs cilantro
- 4 long wooden skewers
Instructions
- 1. Remove the physalis fruits from their papery husks.
- 2. Rinse the physalis fruits briefly under running water.
- 3. Pat the physalis fruits dry carefully with a kitchen towel.
- 4. Rinse the shrimp under running water.
- 5. Pat the shrimp dry as well.
- 6. Set four whole shrimp aside.
- 7. Remove the tail fins from the remaining shrimp if necessary.
- 8. Dice the remaining shrimp into small cubes.
- 9. Dice the physalis fruits into small cubes.
- 10. Mix the diced shrimp and physalis fruits together in a bowl.
- 11. Slice half a lime into thin rounds.
- 12. Squeeze the juice from the remaining limes.
- 13. Stir one tablespoon of lime juice into the shrimp and physalis mixture.
- 14. Season the mixture lightly with black pepper.
- 15. Peel the shallot.
- 16. Dice the shallot into fine cubes.
- 17. Place the shallot cubes together with the vegetable broth and the cream in a pot.
- 18. Let the mixture simmer gently over medium heat for five minutes.
- 19. Cut the avocados in half lengthwise.
- 20. Remove the large pits from the avocado halves.
- 21. Save one quarter of the avocado flesh for later.
- 22. Carefully scoop out the remaining flesh with a spoon.
- 23. Mix the avocado flesh with three tablespoons of lime juice.
- 24. Add this avocado mixture to the warm broth in the pot.
- 25. Blend everything until smooth using an immersion blender or a regular blender.
- 26. Cut the remaining avocado into bite-sized pieces.
- 27. Toss the avocado pieces in the remaining lime juice to prevent browning.
- 28. Thread one shrimp and one lime slice alternately onto a wooden skewer.
- 29. Add the avocado pieces to the soup.
- 30. Gently reheat the soup.
- 31. Be careful not to let the soup boil again.
- 32. Finally, season the soup to taste with salt and cayenne pepper.
- 33. Ladle the soup into plates or bowls.
- 34. Garnish the soup with the shrimp and physalis mixture.
- 35. Garnish the soup with the shrimp skewers.
- 36. Garnish the soup with fresh coriander leaves.
- 37. Serve the dish immediately while warm.
