🍳 Avocado Cream Cheese Bread

Ingredients
- 1 small carrot
- 0.5 avocado
- 1 piece lemon
- salt
- pepper
- 2 slices spelt whole grain bread
- 1 tbsp cream cheese (13 % fat)
- 1 mini cucumber
- 1 small handful red beet sprouts (or other sprouts to taste)
Instructions
- 1. Peel the carrots thoroughly and then grate them coarsely using a kitchen grater.
- 2. Remove the pit from the avocado, peel it, and mash the flesh in a bowl with a fork. Add the lemon juice and mix everything well with the grated carrots, salt, and pepper.
- 3. Toast the bread slices briefly and spread half of the cream cheese mixture on each.
- 4. Wash the cucumber, peel it, and slice it thinly. Arrange the slices in a circle on the bread slices.
- 5. Top with the avocado mixture. Rinse the sprouts, pat them dry, and use them to garnish the bread.
