  1. 1. Peel the carrots thoroughly and then grate them coarsely using a kitchen grater.
  2. 2. Remove the pit from the avocado, peel it, and mash the flesh in a bowl with a fork. Add the lemon juice and mix everything well with the grated carrots, salt, and pepper.
  3. 3. Toast the bread slices briefly and spread half of the cream cheese mixture on each.
  4. 4. Wash the cucumber, peel it, and slice it thinly. Arrange the slices in a circle on the bread slices.
  5. 5. Top with the avocado mixture. Rinse the sprouts, pat them dry, and use them to garnish the bread.
