  1. 1. Cut the avocados in half.
  2. 2. Remove the pits.
  3. 3. Scoop out the flesh from the avocado halves.
  4. 4. Place the flesh and cream cheese into a blender.
  5. 5. Blend the mixture until smooth.
  6. 6. Season the cream with lemon juice, salt, pepper, and chili.
  7. 7. Set aside 16 shrimp.
  8. 8. Finely chop the remaining shrimp.
  9. 9. Use a 6 cm round cookie cutter to cut circles from the toast bread slices.
  10. 10. Spread the avocado cream onto 4 toast circles.
  11. 11. Place the chopped shrimp on top of the cream-covered toast circles.
  12. 12. Cover the layer with another toast circle.
  13. 13. Press the layers down gently.
  14. 14. Repeat the layering process two more times.
  15. 15. Always finish each tartlet stack with a layer of avocado cream.
  16. 16. Wash the chives and shake them dry.
  17. 17. Cut the chives into fine rings.
  18. 18. Use them to decorate the edges of the tartlets.
  19. 19. Peel the grapefruit and remove the white pith.
  20. 20. Separate the fruit segments from the membranes.
  21. 21. Cut the grapefruit segments in half.
  22. 22. Place the grapefruit segments and the reserved whole shrimp on top of the tartlets.
  23. 23. Serve the dish garnished with dill.
