🍲 Creamy Avocado Dill Soup with Smoked Trout

Ingredients
- 2 spring onions
- 3 ripe avocados
- 2 tbsp lemon juice
- 1 tbsp freshly chopped dill
- 3 tbsp plain yogurt
- 3 tbsp sour cream
- 600 ml vegetable broth
- Tabasco
- Worcestershire sauce
- 150 g smoked trout
Instructions
- 1. Wash the spring onions thoroughly.
- 2. Trim the hard ends off the spring onions.
- 3. Slice the spring onions into thin rings.
- 4. Cut the avocado in half lengthwise.
- 5. Remove the large pit from the avocado half.
- 6. Scoop out the soft flesh of the avocado.
- 7. Dice the avocado flesh into small cubes.
- 8. Set aside four tablespoons of the avocado cubes.
- 9. Add the lemon juice to the four tablespoons of avocado.
- 10. Add the dill to the four tablespoons of avocado.
- 11. Mix the avocado, lemon juice, and dill together.
- 12. Set the avocado-dill mixture aside.
- 13. Place the remaining avocado part into a blender.
- 14. Add the sliced spring onions to the blender.
- 15. Blend the avocado and spring onions until smooth.
- 16. Add the yogurt to the avocado mixture.
- 17. Add the sour cream to the avocado mixture.
- 18. Stir the yogurt and sour cream in well.
- 19. Pour the broth into the soup gradually.
- 20. Continue stirring while adding the broth.
- 21. Season the soup with Tabasco to taste.
- 22. Season the soup with Worcestersauce to taste.
- 23. Ladle the finished soup into small bowls.
- 24. Flake the smoked trout into bite-sized pieces.
- 25. Place the trout pieces on top of the soup.
- 26. Place the remaining avocado cubes on top of the soup.
- 27. Serve the dish immediately.
