🍳 Avocado Crostini

Ingredients
- 200 g Ciabatta (1 Ciabatta)
- 1 Avocado
- 0.5 Lemon
- 1 clove garlic
- 125 g young goat cheese (without rind)
- salt
- pepper
- 10 cherry tomatoes (e.g. multicolored)
- 0.5 bunch chives
Instructions
- 1. Slice the ciabatta bread into about 1 cm thick slices. Place the slices on the oven rack. Bake them in the preheated oven at 200 °C (convection 180 °C, gas: level 3) until golden yellow. Remove the bread and let it cool down briefly.
- 2. Cut the avocado in half and remove the pit.
- 3. Carefully separate the flesh from the skin and place it in a bowl.
- 4. Squeeze the lemon. Peel the garlic and chop it roughly. Crumble the goat cheese roughly. Add the cheese, 2 tsp lemon juice, and the garlic to the avocado. Puree everything finely. Season with salt, pepper, and if necessary, a little more lemon juice.
- 5. Wash the tomatoes, let them drain, and cut them into quarters.
- 6. Spread the avocado cream on the ciabatta slices. Top them with the tomato pieces. Rinse the chives, shake them dry, cut the stalks once or twice, and sprinkle them over the crostini. Serve the dish immediately.
