  1. 1. Wash the parsley thoroughly, shake off excess water, and pick the leaves off the stems. Then chop the leaves very finely.
  2. 2. Clean and wash the spring onions. Slice them into fine rings. Drain the capers and chop them as well. Finely chop the olives.
  3. 3. Squeeze the lemon. Place the parsley and all prepared ingredients in a bowl. Mix everything with olive oil, one tablespoon of lemon juice, salt, and pepper. Let the mixture sit for about 30 minutes to allow the flavors to develop.
  4. 4. Fold a kitchen towel several times so that it is thick and sturdy. Place one oyster on the towel with the flat, round shell side facing down.
  5. 5. Place the towel over the oyster to protect your hand. Hold the shell firmly with one hand. Carefully insert the tip of the oyster knife into the narrow, pointed side between the two shell halves. Ideally, wear a metal protective glove.
  6. 6. Push the knife blade as deep as possible between the shells. Gently twist the knife to slightly open the shells. Then slide the knife along the inside of the top shell to cut through the oyster's adductor muscle. Lift off the top shell half.
  7. 7. Carefully remove any broken shell fragments. Open the remaining oysters in the same way. Arrange the oysters in their shells on a plate covered with ice to keep them cool. Serve the green sauce alongside.
