Ingredients
- 24 fresh oysters (e.g. Sylter Royal)
- 1 onion
- 0.5 tsp mustard seeds
Instructions
- 1. Thoroughly rinse the oysters under running water.
- 2. Place one oyster with the curved side down in a kitchen towel to ensure a secure grip.
- 3. Firmly pierce the back of the hinge with an oyster knife.
- 4. Twist the knife to pry the shell open.
- 5. Cut the top muscle that connects the shells from the shell.
- 6. Carefully remove the top, flat shell.
- 7. Cut the bottom muscle as well so the oyster is free.
- 8. Make sure the oyster liquor (juice) remains in the bottom shell.
- 9. Gently clean the oyster with your finger to remove loose shell fragments.
- 10. Place the finished oyster on a rack or a plate.
- 11. Peel an onion and dice it into very fine cubes.
- 12. Mix the onion cubes with mustard seeds.
- 13. Distribute this mixture evenly over the oysters.
- 14. Serve the oysters together with graham bread.
