  1. 1. Wash the oysters thoroughly. Place an oyster shell with the curved side down in a kitchen towel to hold it securely. Pierce the hinge at the back firmly with an oyster knife and twist the knife to pry the shell open.
  2. 2. Cut the top muscle connecting the shells from the upper shell. Carefully remove the top shell. Now cut the bottom muscle from the lower shell so the oyster is free. Make sure to keep the natural oyster liquor in the bottom shell.
  3. 3. Clean the oysters with your finger to remove any small shell fragments. Arrange them on a bed of coarse sea salt or on special oyster plates. Serve them with lemon wedges and Graham bread.
