🍽️ Crispy Lentil Balls with Creamy Peanut Sauce

Ingredients
- 250 g red lentils
- 200 ml vegetable broth
- 1 egg
- 1 spring onion
- 1 clove garlic
- 0.5 bunch parsley (chopped)
- 0.5 bunch cilantro (chopped)
- breadcrumbs (as needed)
- cumin (ground)
- salt
- cayenne pepper
- oil (for frying)
- 1 clove garlic
- 1 tbsp peanut oil
- 3 tbsp peanut butter (with pieces)
- 200 ml coconut milk
- cayenne pepper
- soy sauce
Instructions
- 1. Bring the broth to a boil in a pot.
- 2. Stir the lentils into the boiling broth.
- 3. Cover the pot.
- 4. Cook the lentils for about 15 minutes until they are soft.
- 5. Make sure the lentils have absorbed all the liquid.
- 6. Remove the pot from the heat.
- 7. Let the lentils cool down until they are lukewarm.
- 8. Wash the spring onions under running water.
- 9. Remove the dry ends of the spring onions.
- 10. Finely chop the spring onions.
- 11. Peel the garlic.
- 12. Finely chop the garlic.
- 13. Add the cooled lentils to a blender.
- 14. Add the chopped spring onions to the blender.
- 15. Add the chopped garlic to the blender.
- 16. Add the herbs to the blender.
- 17. Add the egg to the blender.
- 18. Blend the mixture until it is smooth and fine.
- 19. Add the breadcrumbs to the lentil mixture.
- 20. Stir in the breadcrumbs until you have a mixture that is easy to shape.
- 21. Season the mixture with cumin.
- 22. Season the mixture with salt.
- 23. Season the mixture with cayenne pepper.
- 24. Form small balls from the mixture.
- 25. Heat oil in a pan or pot.
- 26. Fry the lentil balls in batches in the hot oil.
- 27. Fry the balls for about 1 to 2 minutes each.
- 28. Remove the balls from the oil once they are golden brown.
- 29. Peel the garlic for the sauce.
- 30. Finely chop the garlic for the sauce.
- 31. Put the garlic in a pan with hot oil.
- 32. Let the garlic sweat briefly until it is fragrant.
- 33. Stir the peanut butter into the pan.
- 34. Let the peanut butter sweat briefly with the garlic.
- 35. Deglaze the pan with coconut milk.
- 36. Bring the sauce to a boil.
- 37. Continue to cook the sauce until it reaches the desired thickness.
- 38. Season the sauce with cayenne pepper.
- 39. Season the sauce with soy sauce.
- 40. Pour the finished sauce into a gravy boat.
- 41. Let the fried balls drain on kitchen paper.
- 42. Pat off any excess oil from the balls.
- 43. Serve the lentil balls together with the peanut sauce.
