  1. 1. Slice the mozzarella into 8 pieces. Remove the crusts from the white bread. Place 2 slices of mozzarella on each slice of bread and season with salt, pepper, and thyme. Cover with the remaining bread slices. Brush the edges with a little egg white and press them firmly to seal.
  2. 2. Whisk the eggs with the cream and season with salt and pepper. Roll the rolls in flour first, then dip them in the egg cream mixture. Heat plenty of olive oil in a pan and fry the rolls on both sides until golden brown. Serve immediately.
