  2. 2. Whisk the egg yolks with the cane sugar until creamy and airy.
  3. 3. Beat the egg whites until stiff peaks form.
  4. 4. Add the flour and milk to the egg yolks while stirring constantly until a smooth batter forms.
  5. 5. Gently fold the egg whites into the mixture.
  6. 6. Heat plenty of oil in a pot for deep frying.
  7. 7. The oil is ready when small bubbles rise around a wooden stick (e.g., a spoon handle) that you dip into the fat.
  8. 8. Dip the acacia flowers into the batter and fry them in the hot oil until golden yellow.
  9. 9. Remove the flowers from the oil and let them drain on kitchen paper to absorb any excess fat.
