  2. 2. Cut off the hard stem at the top.
  3. 3. Slice the eggplants lengthwise into thin, even slices.
  4. 4. Cut the feta cheese into wide strips.
  5. 5. Wash the spring onions thoroughly.
  6. 6. Separate the white bulb base from the green tops.
  7. 7. Set the green parts of the onions aside.
  8. 8. Brush the eggplant slices with a total of one tablespoon of olive oil.
  9. 9. Fry the eggplant slices on both sides until golden brown.
  10. 10. Whisk the remaining olive oil with lemon juice, salt, and pepper.
  11. 11. Whip the mixture with a whisk until creamy.
  12. 12. Remove the hot eggplant slices from the heat.
  13. 13. Place one strip of feta on each slice.
  14. 14. Roll the eggplants tightly with the feta.
  15. 15. Tie the rolls securely with the green onion parts.
  16. 16. Drizzle the finished rolls with the prepared sauce.
