🍽️ Fresh Eggplant Rolls with Feta

Ingredients
- 600 g eggplants (2 eggplants)
- 200 g feta
- 3 tbsp olive oil
- salt
- pepper (freshly ground)
- 2 tbsp lemon juice
- 3 spring onions (or chives)
Instructions
- 1. Rinse the eggplants under running water.
- 2. Cut off the hard stem at the top.
- 3. Slice the eggplants lengthwise into thin, even slices.
- 4. Cut the feta cheese into wide strips.
- 5. Wash the spring onions thoroughly.
- 6. Separate the white bulb base from the green tops.
- 7. Set the green parts of the onions aside.
- 8. Brush the eggplant slices with a total of one tablespoon of olive oil.
- 9. Fry the eggplant slices on both sides until golden brown.
- 10. Whisk the remaining olive oil with lemon juice, salt, and pepper.
- 11. Whip the mixture with a whisk until creamy.
- 12. Remove the hot eggplant slices from the heat.
- 13. Place one strip of feta on each slice.
- 14. Roll the eggplants tightly with the feta.
- 15. Tie the rolls securely with the green onion parts.
- 16. Drizzle the finished rolls with the prepared sauce.
- 17. Season to taste with a little more pepper.
- 18. Serve the rolls immediately while warm.
