🍽️ Fried Eggplant with Tomatoes

Ingredients
- 4 tbsp olive oil
- 500 g eggplants (cut into large cubes)
- 2 garlic cloves (finely chopped)
- 200 g tomatoes (peeled and chopped)
- 1 tbsp soy sauce
- salt
- pepper (from the mill)
- 2 tbsp finely chopped sage leaves
Instructions
- 1. Pour the oil into the pan and heat it. Then fry the eggplants and garlic in it.
- 2. Pour in 1/2 cup of water and simmer the vegetables with the lid on for about 5 minutes. Then add the tomatoes, cook them briefly together and season everything with soy sauce, salt and pepper.
- 3. Sprinkle the finished dish with sage and serve it.
