🍽️ Grilled Aubergines with Sheep's Cheese

Ingredients
- 3 eggplants
- salt
- 2 slices country bread
- 6 tbsp olive oil
- 300 g feta
- 1 red chili pepper
- pepper (from the mill)
- 4 tbsp mint
Instructions
- 1. Wash the aubergines, remove the stems, and slice them lengthwise into rounds about 1 cm thick. Sprinkle the slices with salt and let them sit for 15 minutes.
- 2. Tear the bread into small pieces and fry them in a hot pan with 2 tablespoons of oil until golden brown. Remove the pieces and let them drain on a kitchen towel.
- 3. Crumble the feta into small pieces. Wash the chili, cut it in half lengthwise, remove the seeds, and dice it into small cubes.
- 4. Pat the aubergine slices dry, brush them with 2 tablespoons of olive oil, and grill them on a hot grill for 2 minutes on each side.
- 5. Place the aubergines on plates, top with the feta, croutons, and chili. Season with salt and pepper, drizzle with the remaining olive oil, and serve with fresh mint leaves.
