  1. 1. Wash the aubergines, remove the stems, and slice them lengthwise into rounds about 1 cm thick. Sprinkle the slices with salt and let them sit for 15 minutes.
  2. 2. Tear the bread into small pieces and fry them in a hot pan with 2 tablespoons of oil until golden brown. Remove the pieces and let them drain on a kitchen towel.
  3. 3. Crumble the feta into small pieces. Wash the chili, cut it in half lengthwise, remove the seeds, and dice it into small cubes.
  4. 4. Pat the aubergine slices dry, brush them with 2 tablespoons of olive oil, and grill them on a hot grill for 2 minutes on each side.
  5. 5. Place the aubergines on plates, top with the feta, croutons, and chili. Season with salt and pepper, drizzle with the remaining olive oil, and serve with fresh mint leaves.
