  1. 1. Wash the aubergine thoroughly.
  2. 2. Slice the aubergine lengthwise into thin slices.
  3. 3. Sprinkle the slices with salt.
  4. 4. Let the aubergines sit for about 30 minutes to draw out the water.
  5. 5. Pat the slices dry with kitchen paper afterwards.
  6. 6. Peel the onion.
  7. 7. Slice the onion into rings.
  8. 8. Brush the aubergine slices with olive oil.
  9. 9. Place the aubergines together with the onion rings in an aluminum foil tray.
  10. 10. Cook the ingredients on the hot grill.
  11. 11. Turn the slices occasionally.
  12. 12. Grill the aubergines for about 5 minutes.
  13. 13. Wash the tomatoes.
  14. 14. Halve the tomatoes.
  15. 15. Remove the hard core.
  16. 16. Dice the flesh.
  17. 17. Cut four large pieces of aluminum foil.
  18. 18. Brush the foil pieces with olive oil.
  19. 19. Place two slices of cheese on each piece of foil.
  20. 20. Top the cheese slices with the onion rings.
  21. 21. Place one or two slices of the grilled aubergine on top.
  22. 22. Add some diced tomatoes.
  23. 23. Place a sprig of thyme on top.
  24. 24. Season everything with a little pepper.
  25. 25. Seal the foil tightly into packets.
  26. 26. Place the packets on the grill for about 5 minutes.
  27. 27. Grill until the cheese is slightly melted.
  28. 28. Place the grill packets on the plates for serving.
  29. 29. Open the packets carefully.
  30. 30. Sprinkle the contents with coarse salt.
