🍽️ Grilled Aubergines with Melted Cheese

Ingredients
- 1 eggplant
- salt
- 1 red onion
- olive oil (for brushing)
- 2 tomatoes
- 8 slices goat cheese (approx. 30 g each)
- 4 sprigs thyme
- pepper (from the mill)
- coarse Himalayan salt (for serving)
Instructions
- 1. Wash the aubergine thoroughly.
- 2. Slice the aubergine lengthwise into thin slices.
- 3. Sprinkle the slices with salt.
- 4. Let the aubergines sit for about 30 minutes to draw out the water.
- 5. Pat the slices dry with kitchen paper afterwards.
- 6. Peel the onion.
- 7. Slice the onion into rings.
- 8. Brush the aubergine slices with olive oil.
- 9. Place the aubergines together with the onion rings in an aluminum foil tray.
- 10. Cook the ingredients on the hot grill.
- 11. Turn the slices occasionally.
- 12. Grill the aubergines for about 5 minutes.
- 13. Wash the tomatoes.
- 14. Halve the tomatoes.
- 15. Remove the hard core.
- 16. Dice the flesh.
- 17. Cut four large pieces of aluminum foil.
- 18. Brush the foil pieces with olive oil.
- 19. Place two slices of cheese on each piece of foil.
- 20. Top the cheese slices with the onion rings.
- 21. Place one or two slices of the grilled aubergine on top.
- 22. Add some diced tomatoes.
- 23. Place a sprig of thyme on top.
- 24. Season everything with a little pepper.
- 25. Seal the foil tightly into packets.
- 26. Place the packets on the grill for about 5 minutes.
- 27. Grill until the cheese is slightly melted.
- 28. Place the grill packets on the plates for serving.
- 29. Open the packets carefully.
- 30. Sprinkle the contents with coarse salt.
