🍽️ Aubergine Towers with Goat Cheese

Ingredients
- 2 eggplants
- salt
- 200 g goat cheese log
- 2 tbsp olive oil
- pepper (from the mill)
- 4 tbsp balsamic vinegar
Instructions
- 1. Wash the aubergines under running water.
- 2. Slice the aubergines into even rounds.
- 3. Sprinkle the slices with salt.
- 4. Let the salted slices sit for about 30 minutes to release moisture.
- 5. Pat the slices completely dry with kitchen paper.
- 6. Preheat the oven to 200 degrees Celsius using top and bottom heat.
- 7. Slice the goat cheese roll into thin pieces.
- 8. Stack aubergine and cheese slices alternately to form four small towers.
- 9. Place the towers in a baking dish.
- 10. Drizzle the towers with olive oil.
- 11. Season the towers with a little salt and pepper.
- 12. Place the baking dish in the preheated oven.
- 13. Bake the towers for 25 to 30 minutes.
- 14. Remove the towers from the oven.
- 15. Drizzle the finished towers with balsamic vinegar.
- 16. Serve the towers warm alongside a fresh green salad.
