🍽️ Creamy Aubergine Goat Cheese Dip

Ingredients
- 2 eggplants
- 1 garlic clove
- 150 g feta
- 3 tbsp olive oil
- 0.5 lemon
- 1 pinch cumin
- salt
- pepper (from the mill)
Instructions
- 1. Wash the aubergines thoroughly. Place them on a baking sheet lined with baking paper and bake in the preheated oven at 200 degrees (top and bottom heat) for about 30 minutes until they are completely soft.
- 2. Let the aubergines cool down. Then cut them in half and remove the soft flesh from the skin. Add the goat cheese and mash everything together with a fork until creamy.
- 3. Stir in the finely chopped garlic clove, the oil, and the lemon juice. Finally, season the mixture to taste with cumin, salt, and pepper.
