  1. 1. Wash the eggplants thoroughly, cut them in half lengthwise, and brush the cut surfaces with some oil. Season them lightly with salt and pepper. Spread the remaining oil on a baking sheet and place the eggplants on it with the cut side facing down.
  2. 2. Bake the eggplants in the preheated oven at 200 degrees Celsius (convection: 180 degrees, gas mark 3) for about 20 minutes. Serve them hot afterwards.
