  1. 1. Cook the noodles according to the package instructions, rinse them briefly with cold water and let them drain well.
  2. 2. Peel the carrots and cut them lengthwise into thin strips (best done with a vegetable peeler). Chop the peanuts. Wash the chili pepper, halve it, remove the seeds and cut into thin strips.
  3. 3. Peel the garlic and ginger and chop them finely. Mix them with soy sauce, honey and rice wine and season to taste.
  4. 4. Rinse the coriander greens, shake them dry and pick off the leaves. Mix them with the sesame seeds and all the prepared ingredients into the dressing and serve in small bowls.
