🍝 Asian noodle salad with chicken

Ingredients
- 2 chicken breast fillets
- 2 tbsp olive oil
- 0.25 tsp chili powder
- 1 tsp tomato puree
- 1 tbsp honey
- salt
- freshly ground pepper
- 0.5 cucumber
- 80 g Chinese wheat noodles
- 2 tbsp sesame oil
- 3 tbsp lemon juice
- 1 red chili pepper
- 2 spring onions
- 0.5 bunch parsley
- 2 tbsp soy sauce
- 2 tbsp roasted cashew nuts
Instructions
- 1. Mix the olive oil with the tomato puree. Season the mixture with salt, pepper, and chili powder. Stir in the honey and gently warm the marinade until it becomes liquid. Brush the chicken breast generously with this sauce before grilling.
- 2. Pour about 500 milliliters of boiling water over the noodles and let them soak for about 5 minutes. Then drain the water and let the noodles drain well.
- 3. Remove the seeds from the bell pepper and cut the vegetable into thin strips. Mix the strips with sesame oil and lemon juice. Add the drained noodles and let them marinate briefly.
- 4. Grill the chicken breast for 4 to 5 minutes on each side. Brush the meat repeatedly with the remaining marinade while grilling.
- 5. Cut the cucumber in half lengthwise. Scrape out the seeds with a spoon and slice the cucumber halves into thin slices.
- 6. Clean the spring onions and wash them thoroughly. Cut them into wide rings.
- 7. Mix the prepared vegetables with half of the parsley leaves with the noodles. Finally season the mixture with soy sauce. Divide the salad onto plates, sprinkle with parsley and cashew nuts, and place the grilled chicken fillets decoratively on top.
