🍽️ Crunchy Asian Cucumber Salad

Ingredients
- 1 large cucumber
- 2 tbsp salt
- 1 tbsp sesame oil
- 1 tbsp dark soy sauce
- 2 tsp sugar
- 2 tbsp rice vinegar
- 2 tbsp pickled ginger
Instructions
- 1. Rinse the cucumber under running water.
- 2. Use a vegetable peeler to cut the cucumber into very long, paper-thin strips.
- 3. Sprinkle the cucumber strips generously with salt.
- 4. Place the salted cucumbers in a colander.
- 5. Let the cucumbers sit for 45 minutes to let the water drain.
- 6. Rinse the cucumber strips under running water afterward.
- 7. Pat the cucumbers completely dry with a kitchen towel.
- 8. Take the ginger out of the liquid.
- 9. Cut the ginger into thin strips.
- 10. Mix the ginger with the remaining ingredients to make the sauce.
- 11. Add the dry cucumber strips to the sauce.
- 12. Let the salad marinate for about 15 minutes to allow the flavors to blend well.
- 13. Plate the salad.
- 14. Serve the salad.
