  2. 2. Use a vegetable peeler to cut the cucumber into very long, paper-thin strips.
  3. 3. Sprinkle the cucumber strips generously with salt.
  4. 4. Place the salted cucumbers in a colander.
  5. 5. Let the cucumbers sit for 45 minutes to let the water drain.
  6. 6. Rinse the cucumber strips under running water afterward.
  7. 7. Pat the cucumbers completely dry with a kitchen towel.
  8. 8. Take the ginger out of the liquid.
  9. 9. Cut the ginger into thin strips.
  10. 10. Mix the ginger with the remaining ingredients to make the sauce.
  11. 11. Add the dry cucumber strips to the sauce.
  12. 12. Let the salad marinate for about 15 minutes to allow the flavors to blend well.
  13. 13. Plate the salad.
