🍝 Delicious Asian Noodle Soup

Ingredients
- 200 ml vegetable broth
- 5 g ginger (1 piece)
- 1 tbsp light soy sauce
- 1 fresh chili pepper
- 0.5 bunch coriander (10 g)
- 1 spring onion
- 50 g mushrooms
- 50 g ramen noodles
- salt
- 60 g tofu
- 1 tsp sesame oil
Instructions
- 1. Pour the vegetable broth into a pot and warm it up. Peel the ginger and cut it into thin strips. Add the ginger and soy sauce to the broth. Bring the mixture to a boil once and then let it simmer on low heat for 10 minutes.
- 2. Meanwhile, wash the coriander and shake it dry. Wash the chili and spring onions and dry them. Cut the chili and spring onions diagonally into thin rings. Clean the mushrooms and slice them thinly.
- 3. Cook the noodles in a pot of boiling salted water according to the package instructions until they are al dente.
- 4. Add the mushrooms and spring onions to the broth. Let them steep in it on low heat for 5 to 7 minutes.
- 5. Cut the tofu into quarters. Drain the noodles, rinse them, let them drain and add them to the soup. Fill the Asian noodle soup into bowls. Garnish with mushroom slices, coriander, chili and tofu and serve.
