🍝 Quick Asian Noodle Pan

Ingredients
- 1 small onion (60 g each)
- 1 clove garlic
- 1 carrot (100 g each)
- 100 g broccoli
- 0.5 leek stalk (125 g each)
- 100 g mie noodles
- 50 g red lentils
- 1 tbsp peanut butter (15 g each)
- 200 ml coconut milk
- 1 tsp curry powder
- 1 pinch chili flakes
- salt
- pepper
- 1 handful cilantro or flat-leaf parsley (5 g each)
Instructions
- 1. Peel the onion and garlic and chop them finely. Clean the carrot, peel it, and slice it into thin rounds. Wash the broccoli and leek. Divide the broccoli into small florets and slice the leek into rings.
- 2. Place all ingredients (except the cilantro) along with 200 milliliters of water into a large pan or pot. Bring the mixture to a boil, stir well, and let it simmer over medium heat for about 13 to 15 minutes, stirring occasionally.
- 3. Wash the cilantro or parsley, shake off excess water, and pick off the leaves. Season the Asian noodle pan to taste with salt and pepper, sprinkle with chili and the fresh herbs (cilantro or parsley), and serve the dish warm.
