🍝 Quick Asian-Style Beef Noodles

Ingredients
- 400 g beef tenderloin (4 pieces approx. 100 g each)
- 400 g Asian egg noodles (Hokkien)
- 300 g Pak Choi (or chard)
- 2 red chili peppers
- 2 tsp finely chopped coriander leaves
- salt
- sesame oil
- 2 garlic cloves (finely chopped)
- 1 piece ginger (3 cm, grated)
- 2 tbsp light soy sauce
- 2 tbsp Sake
Instructions
- 1. Wash the chili peppers thoroughly.
- 2. Cut the chili peppers in half lengthwise.
- 3. Remove the seeds from the chili peppers.
- 4. Slice the chili peppers into thin strips.
- 5. Wash the pak choi.
- 6. Trim the tough ends from the pak choi.
- 7. Bring water to a boil and salt it generously.
- 8. Cook the pak choi in the boiling water for about 5 minutes (this is called blanching).
- 9. Remove the pak choi from the water.
- 10. Let the pak choi drain well.
- 11. Cook the egg noodles according to the package instructions.
- 12. Let the egg noodles drain as well.
- 13. Heat a non-stick pan.
- 14. Add 1 tablespoon of oil to the pan.
- 15. Fry the steaks for about 3 minutes on each side.
- 16. Wrap the cooked meat in aluminum foil.
- 17. Reduce the heat on the stove.
- 18. Deglaze the pan with 2 tablespoons of sake.
- 19. Add 2 tablespoons of water to the pan.
- 20. Dissolve the browned bits stuck to the bottom of the pan with the liquid.
- 21. Stir soy sauce into the pan.
- 22. Add ginger to the pan.
- 23. Add garlic to the pan.
- 24. Let the sauce simmer for about 1 minute.
- 25. Season the sauce with salt.
- 26. Slice the meat into very thin strips.
- 27. Add the juices released during slicing to the pan.
- 28. Add the drained noodles to the pan.
- 29. Add the meat strips to the pan.
- 30. Add the pak choi to the pan.
- 31. Mix all ingredients in the pan thoroughly.
- 32. Stir coriander into the mixture.
- 33. Stir the chili strips into the mixture.
- 34. Let the mixture sit for a short moment.
- 35. Taste the sauce again and adjust with salt.
- 36. Optional: Heat a grill pan.
- 37. Fry the steaks without fat in the grill pan.
- 38. Combine sake and water in a pot.
- 39. Add soy sauce, ginger, and garlic to the liquid.
- 40. Boil this mixture for about 1 minute.
- 41. Add the juice obtained from slicing the meat to the sauce.
- 42. Add 1 tablespoon of sesame oil to the sauce.
