🍝 Asian noodles with peppers, sprouts and shiitake mushrooms

Ingredients
- 200 g glass noodles
- 300 g shiitake mushrooms
- 2 tbsp peanut oil
- 1 red bell pepper (cut into strips)
- 200 g bean sprouts
- 3 tbsp soy sauce
- 1 tsp freshly chopped ginger
- 1 chili pepper (dried and ground)
- chives (for garnish)
Instructions
- 1. Cook the glass noodles exactly according to the package instructions. Drain them afterwards and let them drip dry well. Clean the shiitake mushrooms and fry them in hot oil for 1 to 2 minutes.
- 2. Sauté the peppers and sprouts for 2 to 3 minutes until they are translucent. Remove the pan from the heat. Fold in the noodles and season everything with soy sauce, ginger and chili. Divide the noodles onto small plates and serve them with fresh chives as a garnish.
