🍝 Asian Noodles with Mussels

Ingredients
- 500 g kitchen-ready scallop meat
- Lemon (juice)
- salt
- pepper
- 20 g fresh ginger
- 2 garlic cloves
- 2 spring onions
- 500 g snow peas
- 50 g sesame seeds
- 4 tbsp oil
- 2 tbsp soy sauce
- 50 ml dry white wine
- 2 tbsp hoisin sauce
- 250 g Chinese egg noodles
Instructions
- 1. Rinse the scallops under cold water, pat them dry, drizzle with lemon juice, and season with salt and pepper.
- 2. Peel the ginger and garlic cloves and chop them finely. Trim the spring onions and dice them. Trim the snow peas, wash them, and pat them dry.
- 3. Heat the wok and roast the sesame seeds in it, shaking constantly. Remove them and place them on a plate.
- 4. Heat 3 tablespoons of oil in the wok. Fry the scallops for 1 minute on each side, remove them, and place them on a plate. Sauté the ginger, garlic, and spring onions with the remaining oil, stirring constantly.
- 5. Cook the noodles according to the package instructions.
- 6. Add the snow peas and toss everything for a few minutes. Season with salt, pepper, soy sauce, white wine, and hoisin sauce. Fold in the scallops and roasted sesame seeds, adjust seasoning, and serve the noodles on Chinese egg noodles.
