  1. 1. Cut the zander fillets into strips approximately 1 to 1.5 cm wide.
  2. 2. Drizzle the fish strips with lemon juice.
  3. 3. Peel the ginger and cut it into small sticks.
  4. 4. Peel the celery and cut it into 1.5 to 2 cm cubes.
  5. 5. Boil the celery and ginger vegetables in boiling salted water for about 6 minutes.
  6. 6. Drain the vegetables and rinse them with cold water to stop the cooking process (this is also called blanching).
  7. 7. Trim the snow peas.
  8. 8. Peel the shallots and halve them.
  9. 9. Cut the halved shallots into strips.
  10. 10. Wash the Thai basil and pat it dry carefully.
  11. 11. Cook the rice according to the package instructions for about 20 minutes.
  12. 12. Heat the oil in a pan.
  13. 13. Sauté the ginger together with the shallots until translucent.
  14. 14. Add the fish to the pan and fry it for 2 minutes.
  15. 15. Add the remaining prepared vegetables to the pan.
  16. 16. Deglaze the dish with soy sauce.
  17. 17. Simmer everything for another 3 minutes.
  18. 18. Season the dish with pepper.
  19. 19. Serve the fish and vegetable mixture together with the rice on plates.
  20. 20. Garnish the dish with the fresh Thai basil.
