🍽️ Quick Asian Fish and Vegetable Skillet

Ingredients
- 600 g Zander fillet (with skin)
- 1 tbsp lemon juice
- 5 cm ginger
- 0.25 celeriac
- salt
- 100 g snow peas
- 2 shallots
- Thai basil
- 200 g basmati rice
- 3 tbsp sesame oil
- 2 tbsp light soy sauce
- pepper
Instructions
- 1. Cut the zander fillets into strips approximately 1 to 1.5 cm wide.
- 2. Drizzle the fish strips with lemon juice.
- 3. Peel the ginger and cut it into small sticks.
- 4. Peel the celery and cut it into 1.5 to 2 cm cubes.
- 5. Boil the celery and ginger vegetables in boiling salted water for about 6 minutes.
- 6. Drain the vegetables and rinse them with cold water to stop the cooking process (this is also called blanching).
- 7. Trim the snow peas.
- 8. Peel the shallots and halve them.
- 9. Cut the halved shallots into strips.
- 10. Wash the Thai basil and pat it dry carefully.
- 11. Cook the rice according to the package instructions for about 20 minutes.
- 12. Heat the oil in a pan.
- 13. Sauté the ginger together with the shallots until translucent.
- 14. Add the fish to the pan and fry it for 2 minutes.
- 15. Add the remaining prepared vegetables to the pan.
- 16. Deglaze the dish with soy sauce.
- 17. Simmer everything for another 3 minutes.
- 18. Season the dish with pepper.
- 19. Serve the fish and vegetable mixture together with the rice on plates.
- 20. Garnish the dish with the fresh Thai basil.
