  1. 1. Cook the mie noodles and peas in salted water for about 3 minutes. Drain everything into a sieve, but keep 50 ml of the noodle water. Let the noodles drain well.
  2. 2. Wash the sprouts and let them drain well in a sieve.
  3. 3. Cut the bell pepper in half, remove the seeds, wash it, and cut it into thin strips.
  4. 4. Crush the Szechuan pepper coarsely in a mortar. Wash the coriander, shake it dry, pluck off the leaves, and chop them roughly.
  5. 5. Heat the oil in a non-stick pan (or a wok). Fry the bell pepper for about 2 minutes over medium heat, stirring occasionally. Mix in the noodles, peas, and the 50 ml noodle water. Continue frying while stirring until the liquid has evaporated.
  6. 6. Whisk the eggs, soy sauce, and Szechuan pepper in a small bowl. Pour the mixture over the noodles. Let the eggs set while stirring.
  7. 7. Mix the coriander and sprouts into the noodles. Plate the noodles, sprinkle with peanuts, and serve.
