🍽️ Chinese-style Fried Noodles

Ingredients
- 200 g Mie noodles
- 50 g peas (frozen)
- salt
- 50 g bean sprouts
- 200 g red bell peppers (1 red bell pepper)
- 0.5 tsp Sichuan pepper
- 0.5 bunch cilantro
- 1 tbsp sesame oil
- 3 eggs
- 2 tbsp light soy sauce
- 2 tbsp roasted, salted peanuts
Instructions
- 1. Cook the mie noodles and peas in salted water for about 3 minutes. Drain everything into a sieve, but keep 50 ml of the noodle water. Let the noodles drain well.
- 2. Wash the sprouts and let them drain well in a sieve.
- 3. Cut the bell pepper in half, remove the seeds, wash it, and cut it into thin strips.
- 4. Crush the Szechuan pepper coarsely in a mortar. Wash the coriander, shake it dry, pluck off the leaves, and chop them roughly.
- 5. Heat the oil in a non-stick pan (or a wok). Fry the bell pepper for about 2 minutes over medium heat, stirring occasionally. Mix in the noodles, peas, and the 50 ml noodle water. Continue frying while stirring until the liquid has evaporated.
- 6. Whisk the eggs, soy sauce, and Szechuan pepper in a small bowl. Pour the mixture over the noodles. Let the eggs set while stirring.
- 7. Mix the coriander and sprouts into the noodles. Plate the noodles, sprinkle with peanuts, and serve.
