🍽️ Asian noodles with shrimp in curry coconut sauce

Ingredients
- 1 bunch spring onions
- 1 tsp ginger
- 250 g shrimp (kitchen-ready)
- 1 tbsp sesame oil
- 1 tbsp curry powder
- 400 ml coconut milk (unsweetened, from the can)
- salt
- pepper (from the mill)
- coriander leaves (for garnishing)
- 400 g egg noodles
Instructions
- 1. Wash the spring onions thoroughly and slice them into thin, diagonal rings.
- 2. Heat some oil in a pot, add the spring onions, ginger, and shrimp, and sauté them briefly. Sprinkle curry powder over them, pour in the coconut milk, bring the mixture to a boil, and let it simmer gently for five minutes. Finally, season everything with salt and pepper.
- 3. In the meantime, cook the noodles according to the instructions on the package.
- 4. Mix the sauce with the cooked noodles, plate the dish, and serve it garnished with fresh coriander leaves.
