🍝 Wok Noodles with Colorful Vegetables and Mango

Ingredients
- 450 wide rice noodles
- 150 g snow peas
- 150 g shiitake mushrooms
- 1 red bell pepper
- 1 red chili pepper
- 1 fresh mango
- 1 tbsp light sesame seeds
- 1 tbsp soy sauce
- 1 unpeeled lime
- 2 tbsp sesame oil
- salt
- pepper
Instructions
- 1. Cook the noodles in salted water until al dente.
- 2. Drain the noodles and rinse them immediately with cold water.
- 3. Let the noodles drain well.
- 4. Clean the mushrooms and slice them thinly.
- 5. Wash the snow peas and trim the ends.
- 6. Boil the snow peas for 3 minutes in boiling salted water (this is called blanching).
- 7. Drain the snow peas and rinse them with cold water.
- 8. Let the snow peas drain.
- 9. Wash the chili and slice it into rings.
- 10. Remove the seeds from the chili rings.
- 11. Cut the pepper in half lengthwise.
- 12. Remove the seeds from the pepper.
- 13. Wash the deseeded pepper.
- 14. Cut the pepper into thin strips.
- 15. Peel the mango.
- 16. Separate the mango flesh from the pit.
- 17. Cut the mango flesh into small pieces.
- 18. Cut the snow peas diagonally into bite-sized pieces.
- 19. Rinse the lime under hot water.
- 20. Grate the lime peel finely (this is called zest).
- 21. Squeeze the juice from the lime.
- 22. Mix the lime juice with the soy sauce and sesame oil.
- 23. Heat the oil in a wok.
- 24. Add the snow peas, pepper strips, mushrooms, and chili to the wok.
- 25. Pour the soy sauce-sesame-lime mixture over the vegetables.
- 26. Add the mango pieces to the wok.
- 27. Heat everything for 1 minute while stirring.
- 28. Add the drained noodles to the wok.
- 29. Fry the noodles for a further 2 minutes while stirring constantly.
- 30. Fill the noodles into bowls.
- 31. Garnish the dishes with the lime zest strips.
