  1. 1. Cook the noodles in salted water until al dente.
  2. 2. Drain the noodles and rinse them immediately with cold water.
  3. 3. Let the noodles drain well.
  4. 4. Clean the mushrooms and slice them thinly.
  5. 5. Wash the snow peas and trim the ends.
  6. 6. Boil the snow peas for 3 minutes in boiling salted water (this is called blanching).
  7. 7. Drain the snow peas and rinse them with cold water.
  8. 8. Let the snow peas drain.
  9. 9. Wash the chili and slice it into rings.
  10. 10. Remove the seeds from the chili rings.
  11. 11. Cut the pepper in half lengthwise.
  12. 12. Remove the seeds from the pepper.
  13. 13. Wash the deseeded pepper.
  14. 14. Cut the pepper into thin strips.
  15. 15. Peel the mango.
  16. 16. Separate the mango flesh from the pit.
  17. 17. Cut the mango flesh into small pieces.
  18. 18. Cut the snow peas diagonally into bite-sized pieces.
  19. 19. Rinse the lime under hot water.
  20. 20. Grate the lime peel finely (this is called zest).
  21. 21. Squeeze the juice from the lime.
  22. 22. Mix the lime juice with the soy sauce and sesame oil.
  23. 23. Heat the oil in a wok.
  24. 24. Add the snow peas, pepper strips, mushrooms, and chili to the wok.
  25. 25. Pour the soy sauce-sesame-lime mixture over the vegetables.
  26. 26. Add the mango pieces to the wok.
  27. 27. Heat everything for 1 minute while stirring.
  28. 28. Add the drained noodles to the wok.
  29. 29. Fry the noodles for a further 2 minutes while stirring constantly.
  30. 30. Fill the noodles into bowls.
  31. 31. Garnish the dishes with the lime zest strips.
