🍝 Asian Noodles with Shrimp and Ginger Dressing

Ingredients
- 400 g Soba noodles
- salt
- 1 cucumber
- 2 spring onions
- 16 shrimp (kitchen-ready, peeled, deveined)
- 1 tbsp sesame oil
- 10 g ginger root
- 75 ml soy sauce
- 5 tbsp brown rice vinegar
- 4 tbsp olive oil
- 2 tsp tahini (sesame paste)
- 3 sprigs cilantro
- 0.5 tbsp toasted sesame seeds
Instructions
- 1. Cook the noodles in salted water for 3 to 4 minutes until they are still al dente. Drain them, rinse with cold water, and let them drain well.
- 2. Wash the cucumber, cut it in half lengthwise, and dice it into small pieces. Trim the spring onions, wash them, and slice them into thin rings.
- 3. Rinse the shrimp and pat them dry. Season with salt and fry in sesame oil in a pan over medium heat for 3 to 4 minutes. Remove the pan from the heat.
- 4. Peel the ginger and chop it finely. Whisk the ginger in a bowl with soy sauce, rice vinegar, olive oil, and tahini.
- 5. Wash the cilantro, shake it dry, and chop the leaves finely. Add the noodles, cucumber cubes, spring onions, and shrimp to a large bowl and mix everything with the dressing. Arrange on a plate and sprinkle with cilantro and sesame seeds.
