  1. 1. Rinse the meat pieces under cold water.
  2. 2. Press the meat pieces flat with your hand.
  3. 3. Season the meat with salt and cayenne pepper.
  4. 4. Mix hoisin sauce, tomato paste, lime juice, and chopped coriander in a small bowl.
  5. 5. Coat the meat pieces thinly with the prepared sauce.
  6. 6. Roll the meat pieces into small rolls.
  7. 7. Wash the spring onions thoroughly.
  8. 8. Cut off the root ends of the spring onions.
  9. 9. Shorten the green parts of the spring onions to a length of about 15 centimeters.
  10. 10. Carefully separate the pak choi into individual leaves.
  11. 11. Wash the pak choi leaves and let them drain well.
  12. 12. Heat two tablespoons of oil in a large pan.
  13. 13. Add the spring onions and pak choi to the hot pan.
  14. 14. Sauté the vegetables over medium heat for five to eight minutes until soft.
  15. 15. Heat the remaining oil in a second pan.
  16. 16. Fry the meat rolls briefly on all sides.
  17. 17. Pour the remaining seasoning sauce over the meat rolls.
  18. 18. Let the sauce absorb into the meat rolls briefly.
  19. 19. Arrange the sautéed spring onions and pak choi as desired on a plate.
  20. 20. Place three meat rolls on top of the vegetables.
  21. 21. Serve the dish drizzled with the remaining sauce.
