  1. 1. Put the peanuts into a non-stick pan. Roast them on the stove without oil until they smell fragrant. Remove the pan from the heat. Let the nuts cool down for a short time. Peel the garlic clove.
  2. 2. Put the cooled peanuts, the garlic, and the coriander seeds into a mortar. Grind everything into a fine paste. Stir in the olive oil. Stir in the sesame oil. Stir in the vinegar. Stir in the Sambal Oelek chili paste. Stir in the soy sauce. Stir in the lime juice.
  3. 3. Cut off the stems of the spring onions. Wash the spring onions thoroughly. Slice them into thin rings. Fold the spring onion rings into the sauce. Fold the fresh coriander into the sauce. Adjust the seasoning of the dressing with soy sauce and sugar.
