  1. 1. Rinse the chicken under cold running water.
  2. 2. Place the chicken in a large pot.
  3. 3. Pour in 2.5 liters of water.
  4. 4. Salt the water.
  5. 5. Bring the mixture to a boil.
  6. 6. Skim off the rising foam with a skimmer.
  7. 7. Wash the soup vegetables.
  8. 8. Peel the carrots.
  9. 9. Peel the celery.
  10. 10. Cut the vegetables into small pieces.
  11. 11. Peel the shallots.
  12. 12. Peel the garlic.
  13. 13. Roughly chop the shallots and garlic.
  14. 14. Peel the ginger with a peeler.
  15. 15. Slice the ginger into thin rounds.
  16. 16. Wash the lemongrass.
  17. 17. Cut the lemongrass lengthwise in half.
  18. 18. Divide the lemongrass into pieces about 3 centimeters long.
  19. 19. Add the prepared soup vegetables to the pot.
  20. 20. Add the shallots to the pot.
  21. 21. Add the garlic to the pot.
  22. 22. Add the ginger to the pot.
  23. 23. Add the lemongrass to the pot.
  24. 24. Add the star anise to the pot.
  25. 25. Add the dried chili peppers to the pot.
  26. 26. Add the fish sauce to the pot.
  27. 27. Place the lid on the pot only halfway.
  28. 28. Simmer the broth on low heat for about 2 hours.
  29. 29. Remove the rising foam again if necessary.
  30. 30. Remove the chicken from the broth.
  31. 31. Use the chicken meat for other dishes.
  32. 32. Strain the broth into a second pot through a sieve.
  33. 33. Place the covered broth in the refrigerator.
  34. 34. Let the broth cool for at least 8 hours (preferably overnight).
  35. 35. Lift off the solidified fat layer with a wide spoon.
  36. 36. Bring the broth back to a boil.
  37. 37. Reduce the broth in the open pot to 1.2 liters.
  38. 38. Lightly salt the broth.
  39. 39. Add a few drops of lime juice if desired.
  40. 40. Use the broth immediately.
  41. 41. Or let it cool and store it chilled.
